Breakfast Tacos

Ingredients

Tofu scramble

  • 250g firm tofu crumbled
  • 1 cup mushrooms sliced
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • 1/2 tsp smoked paprika
  • 2-3 Tbsp nutritional yeast
  • 1 tsp curry powder (optional)
  • 1/3 cup veggie stock
  • 2 Tbsp Mayver’s Tahini
  • 2 tsp tamari
  • Salt and pepper
  • Handful Kale chopped
  • Corn, quinoa or wheat tortillas

Toppings

  • Roasted white & sweet potatoes
  • Black beans
  • Red cabbage
  • Avocado
  • Spring onion

Method

  1. Add all ingredients except the veggie stock, tahini and kale to a pan and fry for 3 minutes or until fragrant.
  2. Add the remaining ingredients, and cook for a further 5 minutes on high heat.
  3. Assemble the tacos.
