1 tin cannellini beans, rinsed and drained
4 tblsp spelt flour
1 tblsp maca powder
1 tsp baking powder
1/3 cup Mayver’s Almond,Brasil and Cashew Spread
¼ cup + 2 tblsp maple syrup
1 tsp vanilla essence
4 squares vegan white chocolate, roughly chopped
1. Preheat the oven to 175C, and line an 8×8 inch square baking tin.
2. In a food processor, add the beans, ABC spread, maple syrup, and vanilla. Blend until smooth! Add the flour, maca, and baking powder and blend until just incorporated.
3. Scrape the batter into the tin and smooth the top with a knife. Top with the roughly chopped white chocolate, pressing it down lightly.
4. Bake for 15 minutes, or until a skewer comes out mostly clean. Let the blondies cool in the tin for at least 2 hours before transferring to a wire rack to cool completely. Cut into equal squares, and store in an airtight container.
